S'mores Cookies

S'mores Cookies
At first I was testing out a chocolate chip cookie recipe for you guys but it wasn't living up to my standards. Stuffed Puffs so happen to send me some new marshmallows called Big Bites and I figured why not make a s'mores cookie? So I laid down half of a graham cracker on my silicone mat lined baking sheet then topped it with a frozen chocolate chip cookie dough ball, I threw it in the oven and when it was almost finished I took them out and added the marshmallows! Thankfully they sent me three of their flavors Graham Cracker, Oreo and Birthday Cake. I topped the cookies with these flavors and threw them back in the oven for a couple of minutes and out came these ooey gooey s'mores cookies. This is by far the best s'mores cookie I've made.

Equipment:

  • Stand mixer or hand mixer
  • Silicone Mat
  • Cookie Sheet
  • Cookie Scoop

Tips:

  • Freezing the cookie dough is mandatory for this recipe. Without freezing the dough the cookies will be flat and spread too much. 

S’mores Cookie Recipe:

3 cups flour
1/2 teaspoon baking soda
2 sticks butter
1 tablespoon shortening
1 cup brown sugar
1/2 cup white sugar
2 eggs
2 teaspoons vanilla
1 cup chopped dark chocolate chunks or chips
1 cup chopped milk chocolate chunks or chips
Graham crackers
Stuffed Puffs Big Bites or Jumbo Marshmallows

Instructions:

  1. Line a cookie sheet with parchment paper or use a silicone mat. 
  2. Cream together softened butter, shortening and sugar until light and fluffy, about 5 minutes. 
  3. Add eggs one at a time to your butter and sugar mixture. Add vanilla. 
  4. In a separate bowl measure out the flour and the baking soda, mix with a fork or whisk to distribute and aerate flour. Add the flour mixture to the butter mixture and mix for 10-15 seconds until almost all the flour is distributed. 
  5. Finally, add the chopped chocolate to your dough and mix until fully incorporated.
  6. Scoop the cookie dough on a lined cookie sheet and arrange them close together. Place cookie dough in the freezer for 4 hours or until frozen solid. 
  7. Preheat the oven to 375° F. Place about 6-8 halves of Graham crackers on a lined cookie sheet. Place the cookie dough on top of each Graham cracker. 
  8. Bake the cookies for 18 minutes then take them out the oven and place a jumbo marshmallow in the center of each cookie. Place the cookies back in the oven for 4 minutes. 
  9. Take the cookies out the oven and let them cool on the cookie sheet for 10 minutes and enjoy.
