Hand Apple Pies


Recipe:

2 large apples
2 teaspoons lemon juice
1/4 cup light brown sugar
1/4 teaspoon ground cinnamon
4 teaspoons water
3 teaspoons cornstarch

Flaky Pie Dough:

1 1/4 cups all purpose flour
2 teaspoons sugar
10 tablespoons salted butter
3-4 tablespoons cold water
Egg wash(1 egg, pinch of salt, splash of water)
Sugar for sprinkling

Directions

1. Peel, core, and finely dice 2 large apples.
2. Toss the diced apples with 2 teaspoons of lemon juice to prevent browning.
3. In a saucepan, combine apples, 1/4 cup light brown sugar, 1/4 teaspoon ground cinnamon, 4 teaspoons water, and 3 teaspoons cornstarch.
4. Cook the mixture over medium heat for 5-6 minutes or until it thickens. Set aside to cool.

Flaky Pie Dough:

1. In a bowl, mix 1 1/4 cups all-purpose flour and 2 teaspoons sugar.
2. Cut in 10 tablespoons of cold salted butter until the mixture resembles coarse crumbs.
3. Gradually add 3-4 tablespoons of cold water, mixing until the dough comes together.
4. Divide the dough in half, shape into disks, wrap in plastic, and refrigerate for at least 30 minutes.

Assembly:

1. Preheat your oven to 375°F (190°C).
2. Roll out one dough disk on a floured surface and cut into 4 equal squares.
3. Place a spoonful of the cooled apple filling in the center of each square.
4. Fold the dough over the filling, forming a triangle, and press the edges to seal.
5. Beat together 1 egg, a pinch of salt, and a splash of water for an egg wash.
6. Brush each turnover with the egg wash and sprinkle with sugar.
7. Repeat the process with the second dough disk.
8. Place turnovers on a baking sheet and bake for 35-40 minutes or until golden brown.
