S'mores Brownies

Red, White, & Blue Rainbow Cookies

Traditionally, red, white and green to represent the Italian Flag, Italian rainbow cookies made using almond paste as a base is a layered cookie filled with apricot jam and topped with chocolate on the top and bottom A.K.A the 7 layered cookie, I usually make these around the holidays at the end of the year, but I decided to reintroduce these for the 4th of July. Almost a Christmas in July situation but make it star-spangled. I layered these cookies with orange marmalade and topped them with a dark chocolate ganache. Chocolate Lava Poptarts

Dough Recipe:  1 1/4 cup flour 1/2 cup cocoa powder 1/2 cup powdered sugar 1/4 tsp baking soda 2 tbsp a water 1 1/3 sticks butter   Chocolate Filling: 1/2 cup dark chocolate 1/2 cup heavy cream Chocolate Icing:  1 1/2 cup powdered sugar 1 egg white 2 tsp lemon juice 1/2 tsp vanilla 1 tablespoon cocoa powder Water(1/4 teaspoon as needed)    Instructions: Preheat oven to 350° F. Chocolate Chip Ice Cream Sandwiches

Equipment: Stand mixer or hand mixer Cookie sheet  Ice cream scoops  Round cookie cutters    Recipe: 3 cups all purpose flour 1/2 teaspoon baking soda 1 1/2 sticks salted butter 1/4 cup vegetable shortening 1 cup brown sugar 1/2 cup granulated sugar 2 eggs 2 teaspoons vanilla 2 cups mini semisweet chocolate chips (plus more for rolling) 1 tub of vanilla ice cream  Instructions:  Preheat oven to 375° F. Black Forest Tart

  Black Forest Tart. An original recipe I came up with on the fly. At first I was attempting to make a black forest cookie but along the way it just made more sense to make a tart. I may not be that experienced when it comes to pies & tarts but I promise you this tart recipe is pretty much no fail. Even if it does, your'e guaranteed a tasty treat!
